  • 4-5 boneless pork chops, 1/2 inch thick
  • 3 eggs
  • 2 Tbsp milk
  • 1 cup freshly grated Parmesan cheese
  • 3/4 cup Italian bread crumbs
  • 1/2 tsp salt
  • 1/2 tsp pepper


  1. Make egg wash by blending together milk and eggs. On a large rimmed plate or shallow and wide bowl, mix the Parmesan cheese, bread crumbs, salt and pepper.
  2. Dredge pork chops into bread crumb mixture, then milk mixture and again in bread crumb mixture. Place on non-stick baking sheet (i.e. copper) or use silicone mat.
  3. Pre-heat oven to 350 F. Allow the pork chops to rest while the oven is heating.  Breading sticks better when it has 15-30 minutes to rest before baking. This step is not necessary but highly recommended for a nice, crispy crust.
  4. Pork should reach an internal temp of 145 degrees. Allow to rest for 5 minutes before serving.


How long pork chops need to bake depends on the thickness, as well as whether it is bone in pork chops or not. The instructions are based around slightly more than 1/2 inch thick oven baked boneless pork chops. Also, if you sear the meat before, that will impact the baking time. Pork needs to be cooked to an internal temperature of 145 degrees F. A good guideline is 8 minutes per side per half inch of meat. Bake in a 350F oven. If you prefer to sear your meat before oven baking, reduce the cook time to 4 minutes each side. If you use bone in pork chops, you may need to add a few minutes to the cooking time.   
Use a non-stick cookie sheet, like a copper baking sheet or a silicone mat. Cooking sprays and oils tend to soak up into the crust and don’t prevent sticking.
