Ingredients

  • 1/2 large yellow red or orange bell peppers, sliced in strips
  • 1 medium sweet onion thinly sliced
  • 2 large garlic cloves minced
  • ½ cup sun-dried tomatoes drained and chopped
  • 4 large chicken breasts boneless, skinless
  • 1 Tablespoon Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat the oven to 375°F
  2. Place 4 to 6 squares of aluminum foil out. Lay chicken breast in the center of each square. Add peppers, onions, garlic, and tomatoes on chicken. Add more of ingredients you like or omit any you don't.
  3. Sprinkle evenly with Italian seasoning, salt, and pepper. Wrap tightly to seal each package.
  4. Lay on a sheet tray to catch any juices that may run out. Bake 375°F for 25 to 35 minutes depending on the size and thickness of the chicken. You may have to cut into one of the breasts to check for doneness.
